  • Nick Cataldo

    FOUNDER
    Dovetail Distillery was conceived in 2016 by Nicholas Cataldo. Before opening Dovetail Distillery, he was a chef for over 20 years. He spent most of his career working in top restaurants in NYC. He got started in distilling while making a sauce for a dish he was working on. He spent almost 3 years working on a recipe that brought out his favorite grain, oats. Dovetail Distillery now has a unique product unlike anything on the market.

    SALES MANAGER

    Sal Cataldo , Born in Brooklyn NY with over 35 Years in Sales in many Tech Start ups in the Western US.

    Sales Director at Dovetail Distillery since 2024. Developing NEW accounts in the Restaurants , Bars and Liquor store markets.

  • Nancy Cataldo

    The Accountant

    Born and raised in California. Living in the San Gabriel and San Fernando Valley. Nearly 30 years in Accounting and Finance.

    She enjoys cooking and baking (Oatmeal Raisin cookies) and has a passion for interior design and gardening.
