About Us

Dovetail Distillery was conceived in 2016 by Nicholas Cataldo. Before opening Dovetail Distillery, he was a chef for nearly 20 years. He spent most of his career working in top restaurants in NYC. He got started in distilling while making a sauce for a dish he was working on. He met some folks in New York that showed him how a distillery operation works and began putting the pieces together. He spent almost 3 years working on a recipe that brought out his favorite grain, oats. Dovetail Distillery now has a unique product unlike anything on the market. Being in the restaurant business for so long he was able to sample 100's of small batch craft spirits. When it comes to whiskey, Dovetail Distillery stands apart as the oat comes through in the final product, it is not just an element in the mash bill. It has an upfront bit of spice with sharp grassy tones that are followed by a soft caramel finish. 

 Looking back, two nostalgic milestones depict Nick's Life. One being his signature white on white culinary display (white plate-white entree'-white sauce) which placed him in the most prestigious cadre' in recognizing his 2 decades as a Chef on both US coasts and the other being the joy of receiving the most aromatic & tastiest Oatmeal-Raisin cookies his mother sends him for his birthday as well as Christmas, every year. 

Nick's Dove product is his life's message-in-a-bottle, clear white alcohol with a hint of an Oatmeal-Raisin cookie! 

 Nick is devoted to his distillery in Mound House, NV and all he wants is to spread Love & Affection with every bottle or apparel sold!
